- Chicken Soup with Vegetables
This is
an easy to prepare and tasty chicken soup with an
emphasis on vegetables, with the homemade taste.
This is
a chicken based soup. The special part of this soup is
the homemade noodle mixture. This is a special mixture that
is frozen and then flaked as noodles. Sprinkle with Romano
cheese and this dish is scrumpshish.
This is
a great tasting cod fish based soup without the fishy taste.
The white meat of the cod fish is smooth like silk and blends
masterly with the finely chopped celery.
Salads
This is
a salad that accompanies a sandwich or included in a buffet
of lunch and dinner items.
Nothing
can beat this salad when you can get fresh, locally grown tomatoes.
As with
the tomato salad above, the fresher the string beans, the greater
the taste. With a bit of vinegar, this has a tangy after
taste.
This is
a simple dressing that is not overwhelming. It allows
you to enjoy the taste of the lettuce and yet still have a great
flavor compliment each leaf.
Entrees
A tempting
blend of spices cooked in oil and served over a bed of spaghetti.
Top this dish with Romano cheese and you will not be able to
stop eating when you are full.
Besides
tasting great, this dish has a healthy feel. You will
think broccoli and spaghetti are as natural together as peanut
butter and jelly.
Rapini
is a green type vegetable that has you think Italian when
you eat it. The aroma from the garlic excites the senses.
- Chicken (Baked) w/Peas & Potatoes
This could
be my favorite recipe in this book. I hate peas.
I always hated peas. With this dish, you will become a
peas lover. If you already like peas, you will faint with
happiness. I cannot even describe the potatoes. They are
overly cooked in brown sauce. Unbelievably good.
The chicken falls off the bones and the stuffing is incredible.
When I have this meal, I overeat. (what else is new?)

A quick
sauce that is vegetarian and out of this world. You
will not believe a quick sauce can taste this Italian.
A very
tasty way to prepare veal. This goes great with a salad
with our Italian dressing to dunk the veal in. There is
also a tempting recipe for veal cutlet Parmesan.
A great
way to prepare eggplant. This is with a red tomato sauce.
This makes a great tasting sandwich.
A stew
made of vegetable and zucchini. A very hearty dish.
This is
a dish I have eaten every Friday since I can remember.
